Ingredients

    1. 1 lb salmon fillet
    2. 2 tbsp olive oil
    3. 1 tsp chipotle chile powder
    4. 1 tbsp honey
    5. 2 cloves garlic, grated
    6. 1 tsp lime zest + 2 tbsp lime juice
    7. Salt and black pepper, to taste

For the Creamy Slaw:

      • 1/2 cup plain Greek yogurt
      • 2 tbsp fresh dill, chopped
      • 2 scallions, finely sliced
      • 1 tbsp olive oil
      • 2 cups shredded slaw mix

For Assembly:

    • 8 small flour tortillas
    • 1 avocado, sliced
    • 34 radishes, thinly sliced
    • Lime wedges, for serving

Instructions

  • Preheat your oven to 425°F.
  • Mix olive oil, chipotle chile powder, honey, garlic, lime zest, lime juice, salt, and pepper to create the marinade.
  • Coat the salmon evenly with the marinade.
  • Place the salmon on a baking sheet and bake for 10–12 minutes until it flakes easily.
  • Prepare the yogurt dressing by mixing Greek yogurt, dill, scallions, olive oil, salt, and pepper.
  • Toss the slaw mix with the dressing until well coated.
  • Warm the tortillas in a skillet or oven.
  • Assemble the tacos by adding salmon, slaw, avocado, and radishes. Serve with lime wedges.
