- This salmon patties recipe creates crispy golden patties with a tender, flaky center using simple pantry ingredients. Perfect for quick dinners or meal prep.

- 1 cup panko breadcrumbs
1 small onion, grated with juice
1 garlic clove, minced
400 g (14 oz) cooked salmon or canned salmon, drained
2 scallions, finely sliced
1/3 cup fresh dill, chopped (or 1 tsp dried herbs)
2 eggs
1/2 cup Parmesan cheese
1/4 tsp salt
1/4 tsp black pepper
2 tbsp vegetable oil
Oil spray
Instructions
- Preheat oven to 220°C / 430°F (200°C fan). Mix breadcrumbs with grated onion and juice.
Add garlic, scallions, dill, eggs, Parmesan, salt, and pepper. Mix well.
Gently fold in the salmon without overmixing.
Shape into patties about 1.5 cm thick.
Heat oil on a baking tray in the oven for 2 minutes.
Place patties on tray and bake for 15 minutes.
Flip carefully, spray lightly with oil, and bake 5 more minutes until golden.
Serve warm with lemon wedges, yogurt, or sour cream.
Notes
- Do not overmix to keep texture light and flaky.
Drain canned salmon well before using.
Use panko breadcrumbs for best crispiness.
Chill mixture briefly if too soft to shape.
