Description

  • Juicy salmon burgers made with fresh salmon, Old Bay seasoning, and a creamy sauce served on toasted brioche buns.

Ingredients

  1. 1 1/4 pounds fresh salmon, skin removed and cut into chunks
    1 large egg, beaten
    1/3 cup panko breadcrumbs
    1 teaspoon onion powder
    1 teaspoon garlic powder
    2 teaspoons Old Bay seasoning
    1 tablespoon mustard powder
    1 tablespoon fresh lemon juice
    2โ€“3 tablespoons minced chives
    2 tablespoons vegetable oil
    4 slices Havarti dill cheese
    4 brioche buns, toasted
    1 cup caramelized onions
    1 avocado, sliced
    1/2 cup mayonnaise
    1 tablespoon chives
    2 teaspoons Old Bay seasoning
    2 teaspoons lemon juice

Instructions

  • Pulse salmon in a food processor until finely chopped but still slightly textured.
    Move most salmon into a bowl and blend a small portion into a paste.
    Mix salmon, egg, breadcrumbs, spices, lemon juice, and chives until combined.
    Shape mixture into 4 thick patties and rest for 10 minutes.
    Heat oil in a skillet over medium heat.
    Cook patties for 3 minutes per side until golden.
    Add cheese during the final minute of cooking.
    Mix mayo, chives, Old Bay, and lemon juice for the sauce.
    Spread sauce on toasted buns, add salmon patty, onions, and avocado.
    Serve warm.

Notes

  1. Do not overmix the salmon mixture to keep texture light.
    Resting patties helps them hold shape during cooking.
    Cook over medium heat for best crust and juicy center.
    Sauce can be adjusted with extra lemon for brightness.
