- BBQ chicken salad is a fresh, healthy, and easy summer meal with grilled chicken, crisp vegetables, and BBQ ranch dressing.
Ingredients
Scale
- 2 chicken breasts
2 tsp olive oil
Salt and pepper
2 tbsp BBQ sauce
6 cups romaine lettuce
1 cup cherry tomatoes
1 cup black beans
1/2 cup corn
1/4 cup red onion
Tortilla chips
Cilantro
1/3 cup ranch dressing
Instructions
- Grill chicken with seasoning and BBQ sauce.
Let rest then slice.
Mix lettuce, beans, corn, tomatoes, onion.
Add chicken on top.
Mix BBQ ranch dressing.
Drizzle and toss.
Top with chips and cilantro.
