Ingredients

- 1 ¾ cups white whole wheat flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon sea salt
¼ teaspoon nutmeg
â…“ cup melted coconut oil or olive oil
½ cup honey or maple syrup
2 eggs
½ cup milk of choice
2 teaspoons vanilla extract
1 ½ cups grated zucchini (well squeezed)
¾ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 325°F (165°C) and grease a loaf pan.
Whisk oil and honey together, then add eggs and mix well.
Add milk, vanilla, cinnamon, baking soda, salt, and nutmeg.
Fold in flour gently until just combined.
Stir in grated zucchini and nuts if using.
Pour batter into loaf pan and bake for 55–60 minutes.
Let cool completely before slicing.
