Description

  • This vanilla tea party cake is light, fluffy, and filled with berry jam. It’s the perfect elegant dessert for birthdays, Valentine’s Day, or classic afternoon teas.

Ingredients

  1. 1 cup unsalted butter, softened
  2. 1 ½ cups granulated sugar
  3. 4 large eggs
  4. 2 ½ cups all-purpose flour
  5. 2 ½ tsp baking powder
  6. ½ tsp salt
  7. 1 cup whole milk
  8. 1 tbsp vanilla extract
  9. ½ cup raspberry or strawberry jam
  10. Whipped buttercream (see notes)

Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  • Cream butter and sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition.
  • In a separate bowl, whisk together flour, baking powder, and salt.
  • Gradually add dry ingredients to the wet mixture, alternating with milk.
  • Stir in vanilla extract.
  • Divide batter between pans and smooth the tops.
  • Bake for 28–32 minutes or until a toothpick comes out clean.
  • Let cakes cool completely before frosting.
  • Spread jam between layers, then frost with whipped buttercream.

Notes

  1. For a lighter frosting, beat 1 cup butter with 3 cups powdered sugar and 2–3 tablespoons of milk or cream until fluffy.
  2. Add a few drops of vanilla extract or rosewater for floral notes.
  3. Top with fresh berries, edible flowers, or pastel sprinkles for a tea party vibe.
