- This vanilla tea party cake is light, fluffy, and filled with berry jam. It’s the perfect elegant dessert for birthdays, Valentine’s Day, or classic afternoon teas.

- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- 1 cup whole milk
- 1 tbsp vanilla extract
- ½ cup raspberry or strawberry jam
- Whipped buttercream (see notes)
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture, alternating with milk.
- Stir in vanilla extract.
- Divide batter between pans and smooth the tops.
- Bake for 28–32 minutes or until a toothpick comes out clean.
- Let cakes cool completely before frosting.
- Spread jam between layers, then frost with whipped buttercream.
Notes
- For a lighter frosting, beat 1 cup butter with 3 cups powdered sugar and 2–3 tablespoons of milk or cream until fluffy.
- Add a few drops of vanilla extract or rosewater for floral notes.
- Top with fresh berries, edible flowers, or pastel sprinkles for a tea party vibe.
