Ingredients

- 1 medium sweet potato, cubed
- 1 tablespoon olive oil Salt and pepper to taste
- 1/2 cup cooked chickpeas
- 1 cup cooked quinoa
- 2 scallions, chopped
- 1/4 cup red cabbage, sliced
- 1/3 cup feta cheese
- 1/4 cup toasted almonds
- 2 cups baby greens Juice of 1/2 lemon
Instructions
- Preheat oven to 400°F and roast sweet potato with olive oil, salt, and pepper for 25–35 minutes.
- Cook quinoa according to package instructions.
- Combine roasted sweet potato, quinoa, chickpeas, scallions, and cabbage.
- Fold in feta, almonds, and greens. Drizzle with lemon juice and serve warm or chilled.
