- 2 cups elbow macaroni (gluten free or regular)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour (or gluten free flour)
- 2 cups milk (whole or 2%)
- 2 cups shredded sharp cheddar cheese
- 1/2 cup mozzarella cheese (optional)
- Salt and pepper to taste
- Breadcrumbs for topping (optional)
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes.
- Gradually whisk in milk until smooth. Cook and stir until thickened.
- Stir in cheddar and mozzarella until melted and smooth.
- Season with salt and pepper. Add cooked macaroni and stir to coat.
- Transfer to a baking dish or slow cooker. Sprinkle with breadcrumbs if desired.
- Bake at 350°F for 15 minutes or keep warm in slow cooker for serving.
