- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup diced potatoes
- 1 cup shredded cooked chicken or beef (optional)
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery; sauté for 5 minutes.
- Stir in garlic and cook for 1 more minute.
- Pour in broth, add potatoes and thyme.
- Bring to a boil, reduce to a simmer, and cook for 25–30 minutes.
- Stir in cooked meat if using, and season with salt and pepper.
- Simmer for 10 more minutes before serving.
Notes
