Ingredients

- 2 chicken thighs (bone-in or boneless)
- 4 cups low-sodium chicken broth
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 cup egg noodles
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1 tbsp lemon juice
Instructions
- Add chicken, broth, carrots, celery, onion, and garlic to the slow cooker.
- Season with salt, pepper, and thyme. Cook on low for 6 hours.
- Remove chicken, shred, and return to pot.
- Add noodles and lemon juice. Cook for 20–30 minutes until noodles are soft.
- Taste and adjust seasoning. Serve warm.

- You can swap noodles for rice or gluten-free pasta.
- Add spinach in the last 10 minutes for extra nutrients.
