Description

Ingredients

  1. 2 chicken thighs (bone-in or boneless)
  2. 4 cups low-sodium chicken broth
  3. 1 cup chopped carrots
  4. 1 cup chopped celery
  5. 1/2 cup chopped onion
  6. 1 clove garlic, minced
  7. 1 cup egg noodles
  8. 1/2 tsp salt
  9. 1/4 tsp black pepper
  10. 1/2 tsp dried thyme
  11. 1 tbsp lemon juice

Instructions

  • Add chicken, broth, carrots, celery, onion, and garlic to the slow cooker.
  • Season with salt, pepper, and thyme. Cook on low for 6 hours.
  • Remove chicken, shred, and return to pot.
  • Add noodles and lemon juice. Cook for 20–30 minutes until noodles are soft.
  • Taste and adjust seasoning. Serve warm.
