Description

Ingredients

  1. 3 tablespoons unsalted butter
    ¼ cup all-purpose flour
    2 cups whole milk
    1 cup vegetable broth
    4 garlic cloves grated
    1 tablespoon fresh thyme chopped
    2 teaspoons sea salt
    ½ teaspoon black pepper
    3 pounds Yukon Gold potatoes sliced thin
    ½ medium yellow onion sliced
    1½ cups grated cheddar cheese

Instructions

  • Preheat oven to 400°F and grease a 9×13 baking dish.
    Melt butter in skillet and whisk in flour for 1 minute.
    Slowly add milk and broth while whisking until smooth.
    Stir in garlic, thyme, salt, and pepper and cook until slightly thickened.
    Layer half of the potatoes in dish, add onions, sauce, and cheese.
    Repeat layers with remaining ingredients.
    Cover with foil and bake 30 minutes.
    Remove foil and bake 35–40 minutes until tender and golden.
    Rest 20 minutes before serving.
