Ingredients

Scale
  1. 1 pie crust (or 2 tsp olive oil for crustless)
  2. 6 large eggs
  3. 1¼ cups heavy cream or milk
  4. 1 cup shredded cheese (Gruyère, cheddar, or Swiss)
  5. 4 oz cooked bacon or ham
  6. 12 cups vegetables (spinach, mushrooms, broccoli)
  7. Salt and pepper to taste
  8. Pinch of nutmeg (optional)

Instructions

  • Preheat oven to 375 °F (190 °C).
  • If using crust, blind bake for 10 minutes; if crustless, grease the dish.
  • Whisk eggs, dairy, seasoning, and nutmeg.
  • Add cheese, meat, and vegetables into the crust or dish.
  • Pour in egg mixture and smooth the top.
  • Bake for 30–35 minutes until center is set.
  • Cool for 10 minutes before slicing and serving.

Notes

  1. You can use any mix of vegetables or proteins on hand.
  2. To keep it gluten-free, go crustless.
  3. Dairy can be a mix of cream and milk or just one.
  4. Freezes well – slice and store individually.
