Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
- In a large bowl, mix cake mix, eggs, and oil until combined.
- Add pink food coloring to shredded coconut in a bowl and stir to coat.
- Scoop dough and roll into balls, then roll in pink coconut.
- Place on tray and bake for 8–10 minutes until edges are set.
- Cool on wire rack before serving.
