Description

  • Chewy chocolate cookies rolled in pink coconut, perfect for parties and gifting. Made from simple cake mix and vibrant decorations.

Ingredients

  1. 1 box chocolate cake mix
  2. 2 large eggs
  3. 1/3 cup vegetable oil
  4. 1 cup shredded coconut
  5. Pink food coloring (gel preferred)

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  • In a large bowl, mix cake mix, eggs, and oil until combined.
  • Add pink food coloring to shredded coconut in a bowl and stir to coat.
  • Scoop dough and roll into balls, then roll in pink coconut.
  • Place on tray and bake for 8–10 minutes until edges are set.
  • Cool on wire rack before serving.

Notes

  1. Use gel coloring for a more vibrant pink.
  2. Add almond extract for a flavor twist.
  3. Store in airtight container for up to 4 days.
