- 2 boneless skinless chicken breasts, cubed
- 2 cups carrots and celery
- 1 yellow onion, chopped
- 1 cup green beans
- 4 cups low-sodium chicken broth
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté onion and celery for 5 minutes.
- Add cubed chicken, salt, pepper, and thyme. Brown lightly.
- Pour in broth, carrots, and green beans. Stir well.
- Bring to a boil, then reduce heat to simmer for 25–30 minutes.
- Taste and adjust seasoning before serving.
