Description

  • Lemon pasta recipes made with fresh lemon zest, garlic, olive oil and parmesan. A bright creamy pasta perfect for busy weeknights.

Ingredients

  1. 1 pound spaghetti
  2. ¼ cup olive oil
  3. 3 garlic cloves, minced
  4. 1 tablespoon lemon zest
  5. 3 tablespoons fresh lemon juice
  6. 3 tablespoons fresh parsley, chopped
  7. ¼ teaspoon crushed red pepper
  8. ⅓ cup freshly grated Parmesan cheese
  9. ½ cup reserved pasta water
  10. Salt and black pepper to taste

Instructions

  • Bring salted water to boil and cook spaghetti until al dente. Reserve ½ cup pasta water before draining.
  • Warm olive oil in skillet over medium heat. Add garlic, parsley and red pepper. Cook one minute.
  • Stir in lemon zest, lemon juice and a splash of pasta water.
  • Add drained spaghetti into skillet. Toss continuously, adding pasta water gradually.
  • Remove from heat and stir in Parmesan. Adjust consistency with more pasta water if needed.
  • Serve immediately with extra cheese and black pepper.

Notes

  1. Always reserve pasta water for a silky sauce.
  2. Use fresh lemon juice for best flavor.
  3. Remove pan from heat before adding cheese to prevent clumping.
  4. Add grilled chicken or shrimp for protein.
