Ingredients

- 1 pound spaghetti
- ¼ cup olive oil
- 3 garlic cloves, minced
- 1 tablespoon lemon zest
- 3 tablespoons fresh lemon juice
- 3 tablespoons fresh parsley, chopped
- ¼ teaspoon crushed red pepper
- ⅓ cup freshly grated Parmesan cheese
- ½ cup reserved pasta water
- Salt and black pepper to taste
Instructions
- Bring salted water to boil and cook spaghetti until al dente. Reserve ½ cup pasta water before draining.
- Warm olive oil in skillet over medium heat. Add garlic, parsley and red pepper. Cook one minute.
- Stir in lemon zest, lemon juice and a splash of pasta water.
- Add drained spaghetti into skillet. Toss continuously, adding pasta water gradually.
- Remove from heat and stir in Parmesan. Adjust consistency with more pasta water if needed.
- Serve immediately with extra cheese and black pepper.
Notes
- Always reserve pasta water for a silky sauce.
- Use fresh lemon juice for best flavor.
- Remove pan from heat before adding cheese to prevent clumping.
- Add grilled chicken or shrimp for protein.
