Description

  1. 1 whole turkey (1012 lbs)
  2. 1/2 cup unsalted butter
  3. 2 tbsp fresh rosemary, chopped
  4. 2 tbsp fresh thyme, chopped
  5. 4 cloves garlic, minced
  6. 1 tsp lemon zest
  7. 1 head cauliflower, chopped
  8. 1/4 cup cream cheese
  9. 1/4 cup heavy cream
  10. 2 cups Brussels sprouts, halved
  11. 1 cup shredded cheddar
  12. 4 slices bacon, chopped
  13. 2 cups green beans, trimmed
  14. 1 cup mushrooms, sliced
  15. 1/2 cup almond flour
  16. 2 tbsp butter (for green bean topping)
  17. 1/2 cup pumpkin purée
  18. 8 oz cream cheese
  19. 2 eggs
  20. 1/3 cup erythritol or monk fruit sweetener
  21. 1/2 tsp cinnamon

Instructions

  • Preheat oven to 325°F. Prepare the garlic herb butter and rub it under turkey skin. Roast for 3–3.5 hours.
  • Steam cauliflower, drain well, blend with cream cheese and butter until smooth.
  • Roast Brussels sprouts, then mix with cheese and bacon. Bake until bubbly.
  • Sauté mushrooms, add cream, mix with green beans. Top with almond flour mixture and bake.
  • Combine pumpkin puree, cream cheese, eggs, sweetener, and cinnamon. Pour over almond crust. Bake until set.

Notes

  1. Make most dishes a day in advance and reheat before serving.
  2. Cauliflower mash and casseroles can be frozen for later use.
  3. Use monk fruit sweetener to keep desserts keto.
