- 1 whole turkey (10–12 lbs)
- 1/2 cup unsalted butter
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 1 tsp lemon zest
- 1 head cauliflower, chopped
- 1/4 cup cream cheese
- 1/4 cup heavy cream
- 2 cups Brussels sprouts, halved
- 1 cup shredded cheddar
- 4 slices bacon, chopped
- 2 cups green beans, trimmed
- 1 cup mushrooms, sliced
- 1/2 cup almond flour
- 2 tbsp butter (for green bean topping)
- 1/2 cup pumpkin purée
- 8 oz cream cheese
- 2 eggs
- 1/3 cup erythritol or monk fruit sweetener
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 325°F. Prepare the garlic herb butter and rub it under turkey skin. Roast for 3–3.5 hours.
- Steam cauliflower, drain well, blend with cream cheese and butter until smooth.
- Roast Brussels sprouts, then mix with cheese and bacon. Bake until bubbly.
- Sauté mushrooms, add cream, mix with green beans. Top with almond flour mixture and bake.
- Combine pumpkin puree, cream cheese, eggs, sweetener, and cinnamon. Pour over almond crust. Bake until set.
Notes
- Make most dishes a day in advance and reheat before serving.
- Cauliflower mash and casseroles can be frozen for later use.
- Use monk fruit sweetener to keep desserts keto.
