Description

A creamy, cheesy, low-carb keto crockpot recipe made with chicken, bacon, and cheddar. Perfect for meal prep.


Ingredients

Scale
  1. 2 pounds boneless skinless chicken thighs (about 8 pieces)

  2. 2¼ tsp dried chives

  3. 1 tbsp dried parsley

  4. 2¼ tsp dried dill weed

  5. 2¼ tsp garlic powder

  6. 1½ tsp onion powder

  7. 1 tsp salt

  8. 8 oz cream cheese, cubed

  9. ⅔ cup chopped cooked bacon (89 strips)

  10. 1¼ cups shredded cheddar cheese

  11. ¼ cup chopped green onions


Instructions

Place the chicken thighs into the bottom of the Crockpot.

Sprinkle the ranch seasoning over the chicken.

Cut the cream cheese into pieces and place it on top of the chicken.

Close the lid of the Crockpot and cook on high for 4 hours without disturbing.

Remove the lid, shred the chicken with two forks and stir the ingredients to combine well.

Add the cheddar cheese, bacon and green onions to the top of the chicken, place the lid on the Crock Pot and allow the cheese to melt.

Notes

1 packet of ranch seasoning mix (keto-friendly version) can be used in place of the seasoning mix of parsley, chives, dill weed, garlic powder, onion powder, and salt.

If you prefer chicken breasts, you can use them instead of thigh meat.

You can substitute the cream cheese with mascarpone or ricotta cheese. 

Turn this into a skillet recipe by using shredded rotisserie chicken and mix it in with the rest of the ingredients in a skillet. When all the ingredients are melted together, dinner is ready!

If all you have is a block of cheddar cheese, just roughly chop it up so that it melts in the slow cooker. No need to shred it!

Try using pork loin in place of chicken. It will shred up just as easily and have the same light flavor.

Leftovers can be stored in an airtight container in the refrigerator for up to a week
