- This high protein crockpot chicken burrito bowl is healthy, filling, and incredibly easy to make with pantry staples.
Ingredients

- 2 chicken breasts
- 1 cup black beans
- 1 cup corn (optional)
- 1 cup diced tomatoes
- 1/2 cup quinoa
- 1 bell pepper, diced
- 1 tbsp taco seasoning
- 1 cup low sodium chicken broth
Instructions
- Add all ingredients to the crockpot.
- Stir gently to mix.
- Cook on LOW for 6 hours or HIGH for 3-4.
- Shred chicken with forks and mix.
- Serve with avocado, lime, or greens.
Notes
- Optional: Add spinach in last 15 minutes.
- Use cauliflower rice for a low carb version.
