Ingredients

  1. 2 boneless, skinless chicken breasts
  2. 2 tbsp olive oil
  3. 1 lemon, juiced
  4. 1 tsp garlic powder
  5. 1 tsp dried oregano
  6. 1/2 tsp sea salt
  7. 1 cup cooked quinoa
  8. 1 cup chopped spinach
  9. 1/2 cup cherry tomatoes, halved
  10. 1/4 cup cucumber, diced
  11. 2 tbsp hummus

Instructions

  • Preheat oven to 400°F.
  • In a bowl, toss chicken with olive oil, lemon juice, garlic, oregano, and salt.
  • Place on a baking sheet and roast for 25 minutes or until cooked through.
  • Cook quinoa as directed and prep veggies.
  • Slice cooked chicken.
  • Assemble bowls: quinoa, spinach, tomatoes, cucumber, and sliced chicken.
  • Top with a spoonful of hummus and extra lemon if desired.

Notes

  1. Double the batch for meal prep. Swap quinoa for brown rice or farro. Use leftover chicken in wraps or salads.
