Ingredients

- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 lemon, juiced
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1 cup cooked quinoa
- 1 cup chopped spinach
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 2 tbsp hummus
Instructions
- Preheat oven to 400°F.
- In a bowl, toss chicken with olive oil, lemon juice, garlic, oregano, and salt.
- Place on a baking sheet and roast for 25 minutes or until cooked through.
- Cook quinoa as directed and prep veggies.
- Slice cooked chicken.
- Assemble bowls: quinoa, spinach, tomatoes, cucumber, and sliced chicken.
- Top with a spoonful of hummus and extra lemon if desired.
Notes
- Double the batch for meal prep. Swap quinoa for brown rice or farro. Use leftover chicken in wraps or salads.
