Description

  • Juicy Hawaiian chicken kabobs with sweet pineapple and savory marinade perfect for BBQ or oven cooking.

Ingredients

  1. 1 3/4 lb chicken breast
  2. 3 cups pineapple chunks
  3. 1 1/2 bell peppers
  4. 1 red onion
  5. 1/3 cup ketchup
  6. 1/3 cup brown sugar
  7. 1/3 cup soy sauce
  8. 1/4 cup pineapple juice
  9. 4 tbsp olive oil
  10. 1 1/2 tbsp vinegar
  11. 4 garlic cloves
  12. 1 tbsp ginger
  13. 1/2 tsp sesame oil salt and pepper

Instructions

  • Prepare marinade by mixing all ingredients
  • Marinate chicken for 1 hour
  • Assemble skewers with chicken, pineapple, and vegetables
  •  Preheat grill to 400°F
  •  Grill 5 minutes each side brushing marinade
  •  Cook until chicken reaches 165°F
  • Serve hot with sides

  1. Use fresh pineapple for best flavor
  2. Do not over-marinate chicken
  3. Soak skewers before grilling
  4. You can bake instead of grill
