- 2 cups cooked ham, diced
- 1 ham bone or ham hock (optional)
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, peeled and cubed
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp smoked paprika
- 6 cups chicken broth
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot. Sauté onion, garlic, carrot, and celery for 5 minutes.
- Add diced ham and stir for another 2 minutes.
- Add potatoes, bay leaf, thyme, paprika, and chicken broth.
- If using, add the ham bone or hock for deeper flavor.
- Bring to a boil, then reduce heat and simmer for 45–60 minutes.
- Remove bone (if used), adjust seasoning with salt and pepper.
- Serve hot with crusty bread.
Notes
- You can substitute sweet potatoes or white beans for variety.
- To freeze, cool completely and store in airtight containers for up to 3 months.
- Add leafy greens like spinach or kale during the last 5 minutes for added nutrition.
