  1. 2 cups Halloween-shaped pasta
  2. 2 cups wagon wheel-shaped pasta
  3. 2 ½ cups peeled chopped pumpkin
  4. 1 teaspoon ground nutmeg
  5. 1 teaspoon ground allspice
  6. 1 teaspoon ground cinnamon
  7. 1 teaspoon minced garlic
  8. 1 teaspoon chopped onion
  9. 1 teaspoon chili powder
  10. 3 tablespoons olive oil
  11. 1 (4 ounce) can sliced black olives
  12. 1 (8 ounce) can garbanzo beans, drained
  13. ¼ cup chopped garlic
  14. ½ cup grated Parmesan cheese
  15. ¼ cup olive oil
  16. 3 tablespoons dried oregano

Instructions

  • Bring a large pot of salted water to a boil. Cook both pastas until al dente, about 12 minutes. Drain and set aside.
  • In another pot, boil chopped pumpkin until tender, about 20 minutes. Drain and return to the pot.
  • Add nutmeg, allspice, cinnamon, garlic, onion, chili powder, and 3 tablespoons olive oil to pumpkin. Stir to coat and cook 5 more minutes.
  • In a large bowl, toss cooked pasta with olives, garbanzo beans, ¼ cup garlic, Parmesan, ¼ cup olive oil, and oregano.
  • Top with warm pumpkin mixture and serve immediately.

Notes

  1. You can substitute pumpkin with butternut squash.
  2. Skip chili powder for a milder kid-friendly version.
  3. Add mozzarella pearls or shredded string cheese for fun spooky toppings.
