  2. Kosher salt and freshly ground black pepper
  3. 2 tablespoons olive oil
  4. 1 medium sweet onion, diced
  5. 3 large carrots, peeled and diced
  6. 3 ribs celery, diced
  7. 3 cloves garlic, minced
  8. 2 tablespoons all-purpose flour
  9. 3 tablespoons tomato paste
  10. 1 (14.9-ounce) can Guinness Draught beer
  11. 2 cups beef stock
  12. 1 tablespoon Worcestershire sauce
  13. 4 sprigs fresh thyme
  14. 2 bay leaves
  15. 2 tablespoons chopped fresh parsley

Instructions

  • Season beef with salt and pepper.
  • Heat olive oil in a Dutch oven; brown beef in batches. Set aside.
  • Sauté onion, carrots, and celery until softened.
  • Stir in garlic, tomato paste, and flour; cook until golden.
  • Deglaze with Guinness, scraping up browned bits.
  • Return beef to pot; add stock, Worcestershire, thyme, bay leaves.
  • Simmer partially covered for 2 hours.
  • Remove herbs, stir in parsley, and adjust seasoning.
  • Serve hot with bread or mashed potatoes.
