- These mini cheesecakes are the perfect Galentines dessert easy to make ahead and rich in flavor with a creamy base and graham cracker crust.
Ingredients

- 1 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp butter, melted
- 8 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg
- 1/2 tsp vanilla extract
Instructions
- Preheat oven to 325°F and line a muffin pan with paper liners.
- Combine graham cracker crumbs, sugar, and butter. Press into liners.
- Beat cream cheese and sugar until smooth.
- Add egg and vanilla. Mix well.
- Pour over crusts and bake for 18-20 minutes.
- Chill for 2 hours before serving.

- Top with berries, melted chocolate, or whipped cream for extra flair.
