Description

Ingredients

  1. 56 medium Yukon Gold or Russet potatoes, peeled and diced
  2. 1 medium onion, finely chopped
  3. 3 cloves garlic, minced
  4. 4 cups chicken or vegetable broth
  5. 1 cup heavy cream or milk
  6. 2 tablespoons butter
  7. 1/2 teaspoon dried thyme (optional)
  8. Salt and black pepper, to taste
  9. 1 cup shredded cheddar cheese (optional)
  10. Cooked bacon, green onions, or chives for garnish

Instructions

  • Peel and dice the potatoes evenly. Finely chop the onion and mince the garlic.
  • Sauté onion and garlic in butter for 3–4 minutes until fragrant.
  • Place potatoes, sautéed aromatics, broth, thyme, butter, salt, and pepper in a slow cooker.
  • Cook on Low for 6–8 hours or High for 3–4 hours, until potatoes are tender.
  • Blend part of the soup using an immersion blender to reach desired creaminess.
  • Stir in cream or milk and shredded cheese. Heat until fully combined.
  • Serve hot, garnished with bacon, green onions, and extra cheese if desired.

  1. Use Yukon Gold potatoes for a naturally creamy texture.
  2. Sautéing aromatics before slow cooking deepens flavor.
  3. For a vegan version, use olive oil, coconut milk, and skip the cheese.
