- 5–6 medium Yukon Gold or Russet potatoes, peeled and diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream or milk
- 2 tablespoons butter
- 1/2 teaspoon dried thyme (optional)
- Salt and black pepper, to taste
- 1 cup shredded cheddar cheese (optional)
- Cooked bacon, green onions, or chives for garnish
Instructions
- Peel and dice the potatoes evenly. Finely chop the onion and mince the garlic.
- Sauté onion and garlic in butter for 3–4 minutes until fragrant.
- Place potatoes, sautéed aromatics, broth, thyme, butter, salt, and pepper in a slow cooker.
- Cook on Low for 6–8 hours or High for 3–4 hours, until potatoes are tender.
- Blend part of the soup using an immersion blender to reach desired creaminess.
- Stir in cream or milk and shredded cheese. Heat until fully combined.
- Serve hot, garnished with bacon, green onions, and extra cheese if desired.

- Use Yukon Gold potatoes for a naturally creamy texture.
- Sautéing aromatics before slow cooking deepens flavor.
- For a vegan version, use olive oil, coconut milk, and skip the cheese.
