- 1 small red onion, thinly sliced

Instructions
- Slice cucumbers thinly with a knife or mandoline.
- Slice the red onion thin and combine with cucumbers.
- Sprinkle with salt and let sit for 20 minutes to draw out water.
- Drain off the liquid, then add vinegar and sugar.
- Mix well until sugar is dissolved.
- Season with pepper and toss with dill if using.
- Serve chilled.
