Ingredients

  1. 1 pound English cucumbers ( to 2 medium)
  2. 1 small red onion, thinly sliced
  3. 1¼ teaspoons kosher salt
  4. 3 tablespoons apple cider vinegar
  5. 2 teaspoons granulated sugar
  6. Freshly ground black pepper, to taste
  7. 1 tablespoon chopped fresh dill (optional)

Instructions

  • Slice cucumbers thinly with a knife or mandoline.
  • Slice the red onion thin and combine with cucumbers.
  • Sprinkle with salt and let sit for 20 minutes to draw out water.
  • Drain off the liquid, then add vinegar and sugar.
  • Mix well until sugar is dissolved.
  • Season with pepper and toss with dill if using.
  • Serve chilled.

Notes

  1. For extra crunch, always salt cucumbers first.
  2. Store leftovers in an airtight container for up to 2 days.
