Description

  • This crockpot chicken spaghetti recipe is creamy, cheesy, and effortlessly comforting. Tender chicken slow-cooks in a rich sauce, then gets mixed with spaghetti for a hearty family meal everyone will love.

Ingredients

  1. 2 chicken breasts (about 1 lb)
  2. ½ teaspoon salt
  3. ½ teaspoon black pepper
  4. 1 teaspoon onion powder
  5. 1 teaspoon parsley
  6. 1 teaspoon paprika
  7. 2 cans cream of chicken soup
  8. 10 oz can Rotel (not drained)
  9. 1 tablespoon minced garlic
  10. 2 cups shredded Colby Jack cheese
  11. ¼ cup sour cream
  12. 1 lb spaghetti

Instructions

  • Spray crockpot with nonstick spray. Add chicken breasts, seasonings, garlic, cream of chicken soup, and Rotel. Lightly stir.
  • Cook on LOW for 4–6 hours until chicken is tender.
  • Remove chicken, shred or cube it, then return to crockpot.
  • Stir in cheese and sour cream until melted and smooth.
  • Cook spaghetti separately, drain, then stir into the crockpot. Mix well and serve.

Notes

  1. Slightly undercook spaghetti to prevent mushiness.  
  2. Use Velveeta for a meltier texture.  
  3. Add frozen peas or bell peppers for extra veggies.
