- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tbsp ground cinnamon
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 2 large eggs (room temp)
- 1 cup sour cream or Greek yogurt
- 1/2 cup melted butter or neutral oil
- 1 tsp vanilla extract
- Streusel: 1/2 cup brown sugar, 1/3 cup flour, 1/4 cup cold butter, 1 tsp cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×9 pan.
- Mix flour, baking soda, baking powder, salt, and cinnamon.
- In a separate bowl, whisk eggs, sour cream, sugar, butter, and vanilla.
- Combine wet and dry ingredients gently until just mixed.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Pour half the batter into the pan, add cinnamon swirl, then top with remaining batter.
- Combine streusel ingredients and crumble over the top.
- Bake for 35–45 minutes or until a toothpick comes out clean.
- Cool in pan before drizzling with optional glaze and slicing.
Notes
- Don’t overmix the batter this helps keep the texture light and moist.
- For variation, add 1 cup of blueberries, diced apples, or chocolate chips.
