- 6 cups mixed greens (spinach, arugula, or spring mix)
- ½ cup dried cranberries
- 1 apple or pear, thinly sliced
- ½ cup pomegranate arils
- ⅓ cup candied pecans or walnuts
- ¼ cup crumbled feta or goat cheese
- ¼ red onion, thinly sliced
- Dressing
- 3 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp honey or maple syrup
- 1 tsp Dijon mustard
- Salt & pepper to taste
Instructions
- In a large salad bowl, combine mixed greens, cranberries, apple slices, pomegranate, nuts, and red onion.
- In a small jar, whisk together olive oil, vinegar, honey, Dijon mustard, salt, and pepper.
- Pour the dressing over the salad just before serving.
- Gently toss to coat, then sprinkle with feta or goat cheese.
- Chill for 10 minutes before serving for enhanced flavor.
