Description

  • This festive Christmas Salad brings color, crunch, and fresh flavor to your holiday table. With greens, fruits, nuts, and cheese, it’s a light yet stunning side dish.

Ingredients

  1. 6 cups mixed greens (spinach, arugula, or spring mix)
  2. ½ cup dried cranberries
  3. 1 apple or pear, thinly sliced
  4. ½ cup pomegranate arils
  5. ⅓ cup candied pecans or walnuts
  6. ¼ cup crumbled feta or goat cheese
  7. ¼ red onion, thinly sliced
  8.  Dressing
  9. 3 tbsp olive oil
  10. 1 tbsp apple cider vinegar
  11. 1 tbsp honey or maple syrup
  12. 1 tsp Dijon mustard
  13. Salt & pepper to taste

Instructions

  • In a large salad bowl, combine mixed greens, cranberries, apple slices, pomegranate, nuts, and red onion.
  • In a small jar, whisk together olive oil, vinegar, honey, Dijon mustard, salt, and pepper.
  • Pour the dressing over the salad just before serving.
  • Gently toss to coat, then sprinkle with feta or goat cheese.
  • Chill for 10 minutes before serving for enhanced flavor.

Notes

  1. Substitute pear for apple if preferred.
  2. Use vegan cheese for a dairy-free version.
