  2. 1 tbsp baking powder
  3. 1/2 tsp salt
  4. 1/2 cup unsalted butter (room temp)
  5. 1 cup granulated sugar
  6. 2 large eggs
  7. 1 tbsp orange zest
  8. 3/4 cup orange juice (fresh)
  9. 1 1/2 cups fresh or frozen cranberries
  10. 1/2 tsp cinnamon
  11. 1/4 tsp nutmeg
  12. 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  • In a separate bowl, cream butter and sugar until light and fluffy.
  • Add eggs one at a time, then mix in orange zest, juice, and vanilla extract.
  • Gradually add dry ingredients to wet, mixing until just combined.
  • Fold in cranberries gently.
  • Pour batter into prepared pan and smooth the top.
  • Bake for 50–55 minutes, or until a toothpick comes out clean.
  • Cool in pan 10 minutes, then transfer to a wire rack to cool completely.
  • Optionally drizzle with orange glaze before serving.

Notes

  1. Use fresh cranberries for a bright tartness or frozen ones if fresh are unavailable.
  2. To make a glaze, mix 1 cup powdered sugar with 2 tbsp orange juice.
