Description

Ingredients

  1. 2 pounds boneless skinless chicken breasts
  2. 1 teaspoon salt
  3. 1/2 teaspoon black pepper
  4. 1 teaspoon Italian seasoning
  5. 3 garlic cloves, minced
  6. 1 small onion, diced
  7. 1 can cream of chicken soup
  8. 1 (8 oz) block cream cheese
  9. 1 cup chicken broth
  10. 1 cup shredded mozzarella
  11. 1/2 cup grated parmesan
  12. 12 ounces penne pasta, cooked separately

Instructions

  • Place chicken in the bottom of the slow cooker and season evenly.
  • Add garlic, onion, cream soup, cream cheese, and broth on top.
  • Cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Remove chicken and shred thoroughly.
  • Return shredded chicken to slow cooker and stir until creamy.
  • Cook pasta separately until al dente and drain.
  • Stir pasta into sauce and top with cheeses.
  • Cover and cook for 10-15 minutes until cheese melts.
  • Serve warm.

Notes

  1. Store leftovers in airtight container up to 4 days.
  2. Add milk or broth when reheating to keep sauce creamy.
  3. Freeze chicken and sauce separately from pasta for best texture.
