- Creamy chicken and rice is the ultimate comfort food rich, satisfying, and incredibly easy to make in one pot or oven-baked.

- 1 lb chicken thighs or breasts
- 1 cup long grain white rice
- 2 cups chicken broth
- 1 cup milk or cream
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup grated Parmesan (optional)
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet or Dutch oven over medium heat.
- Add chicken and sear until golden brown on both sides. Remove and set aside.
- In the same pot, sauté onions and garlic until soft.
- Add rice and stir for 1 minute to toast.
- Pour in chicken broth and stir in thyme, salt, and pepper.
- Return chicken to the pot and bring to a simmer. Cover and cook on low for 18–20 minutes.
- Once rice is tender, stir in milk or cream and Parmesan if using.
- Simmer uncovered for 3–5 minutes until creamy.
- Garnish with chopped parsley and serve warm.
Notes
- You can use cooked shredded chicken for an even quicker version.
- For extra veggies, add peas or spinach at the end of cooking.
