Ingredients

  1.  2 cups graham cracker crumbs
  2.  1/2 cup light brown sugar
  3.  1/2 cup melted unsalted butter
  4.  24 oz full-fat cream cheese, room temperature
  5.  1 cup granulated sugar
  6.  3 large eggs
  7.  3/4 cup sour cream
  8.  1 tbsp fresh lemon juice
  9.  1 tsp vanilla extract

Instructions

  • Preheat oven to 325°F (163°C). Line a 9×13-inch pan with parchment, leaving an overhang.

  • Mix graham cracker crumbs, brown sugar, and melted butter. Press into pan and bake for 8–10 minutes. Let cool.

  • Beat cream cheese until smooth. Add sugar, then eggs one at a time, mixing well.

  • Stir in sour cream, lemon juice, and vanilla. Mix until fully smooth.

  • Pour filling over crust and spread evenly.

  • Bake for 35–40 minutes until set. Cool at room temp for 1 hour.

  • Chill in the fridge for at least 3 hours or overnight.

  • Lift out, slice, and serve with desired toppings.

Notes

  1.  Let all ingredients come to room temperature before mixing for a smoother batter.
  2.  Chill bars completely before slicing for clean, neat cuts.
  3.  Freeze individual bars by wrapping tightly and storing in a sealed container for up to 2 months.
  4.  Allow bars to chill at least 3 hours to set properly and develop flavor.
