- A hearty make-ahead breakfast sausage casserole perfect for brunch gatherings, holidays, or meal prep mornings.

- 1 lb breakfast sausage
- 6 large eggs
- 1 ½ cups milk
- 2 cups shredded cheddar cheese
- 6 slices day-old bread, cubed
- ½ tsp garlic powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13” baking dish.
- In a skillet, cook sausage until browned. Drain excess fat.
- Layer bread cubes and cooked sausage in the baking dish.
- Whisk eggs, milk, garlic powder, salt, and pepper in a bowl.
- Pour egg mixture over bread and sausage. Top with cheese.
- Cover and refrigerate overnight or bake immediately.
- Bake uncovered for 40–45 minutes until golden and set.
- Let rest 5 minutes. Garnish with green onions. Serve warm.
Notes
- You can swap sausage with bacon or veggie crumbles.
- For added flavor, stir in sautéed mushrooms or spinach.
