- 1 lb ground turkey or beef
- 1 cup cauliflower rice

- 1 tsp Italian seasoning
- Salt and pepper to taste

Instructions
- Preheat oven to 375°F and prep a baking dish.
- Sauté ground meat in olive oil until cooked.
- Add cauliflower rice, seasonings, and mix well.
- Fill halved bell peppers with the mixture.
- Top with shredded cheese.
- Bake uncovered for 25 minutes until tender.
